Easy Cheesy Veggies


First off I just want to say... Why is it almost Thanksgiving??!!  This is crazy!  I'm looking at Black Friday Ads today and trying to decide if I want to do the Black Friday/Thanksgiving shopping thing like I do every year or if I should just shop online.  This year has flown by!  I'm kinda glad though... I'm ready for a new year to start!

Every morning I throw the "Does anyone have a dinner request for tonight?" question out to my family and yesterday Eric said, "something cheesy".  I decided that something cheesy should be vegetables and they turned out delightful!  The veggies come out crisp-tender.  If you want them very soft I'd suggest steaming or boiling them for a couple of minutes before starting this recipe.  This dish would be delightful as a main dish with leftover ham chopped up in it!  I served the veggies with boneless seasoned chicken thighs and garlic bread made from leftover hamburger buns.

Easy Cheesy Veggies

1/4 c. butter
1/2 c. cream cheese
1/2 c. sour cream
2 c. shredded cheese
1 tsp ranch dressing seasoning powder

1 lb fresh broccoli, cauliflower, carrot mix

Melt butter and cream cheese together either in the microwave or in a saucepan.  Stir in sour cream, shredded cheese and ranch powder.  Place veggies in a greased baking dish.  Spoon cheese mixture over the top.  It will be thick.  Cover and bake at 350 for 30 minutes.  Stir before serving.
